Wednesday Yummies: Turkey Leftovers with a Twist!

Hi everyone!

Hope you had a great Thanksgiving weekend.  The weather at the cottage was glorious and it was great to all be together. Fabuloso weekend!

Are you full of turkey? Holy cow, I love that meal! Mum cooked a delicious turkey dinner with all the fixings on Saturday, we had leftovers Sunday and hot turkey sandwiches last night. Delish! There was still a little turkey left in our doggy bag that Mum packed for us but Mr. Fix-it and I needed a shake up with the turkey.  Enter in...ideas for Thanksgiving leftovers.

Do you have leftovers that need a little shakeup? Here is what we came up with for dinner tonight with our leftover turkey and cranberry sauce as well as a few other recipes that will use up your gobble gobble....

Here's what you need:


- leftover turkey
- leftover cranberry sauce
- brie
- jalapeno pepper
- red onion (although after eating it, I don't think I would add the onion next time..a little too strong)
- bread/bun (these are chedder/jalepeno buns..delish)

Roasted Parsnips- peel, slice, drizzle with oil, s&p and roast for 20 mins at 425 degrees. Easy peasy!

Once your parsnips are done, pop your sandwich in the oven for 5 mins and VOILA! A fresh.fabulous.sophisticated way to use up extra turkey and give it a new spin!

Don't forget turkey soup. Do you make it? I'm not so good with "cooking the bones" part for stock. Gross. I leave that part up to my mum, her soup is delish.
